Description
A quick and easy weeknight dinner featuring flavorful chicken sausage and fresh vegetables, all cooked in the air fryer in just 10 minutes.

- 1 large red bell pepper – cut into 1-inch pieces
- 1 large orange bell pepper – cut into 1-inch pieces
- 1 red onion – peeled and cut into 1-inch pieces
- 1 medium zucchini – cut into 1-inch pieces
- 1 tablespoon avocado oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- Pinch of black pepper
- 1 package chicken sausage (12 oz) – Italian flavor
Instructions
- Chop the veggies: Start by chopping your bell peppers, zucchini, and red onion into 1-inch pieces. Add them to a large bowl.
- Prepare the veggies: Drizzle the chopped veggies with avocado oil and toss to coat.
- Mix the spices: In a smaller bowl, combine the garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper. Mix well.
- Season the veggies: Pour the spice blend over the veggie mixture and toss thoroughly.
- Slice the sausage: Take your chicken sausage and slice it into 3/4 inch rounds. Add these to the bowl with the veggies and toss.
- Preheat the air fryer: Preheat your air fryer to 390°F and spray the basket with cooking spray.
- Cook: Add the sausage and veggie mixture to the air fryer basket in an even layer. Cook for 10 minutes, flipping halfway through.
- Serve: Remove from the fryer and serve as is or over cauliflower rice.
Notes
For a spicier kick, add red pepper flakes or jalapeños. Feel free to swap out the veggies based on what’s available.
