Deliciously crispy air fryer sweet potato cubes, perfect for a cozy snack or side dish that the whole family will love.

- 2–3 medium sweet potatoes (about 3.5 cups peeled and cubed)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- Wash and dry the sweet potatoes. Using a vegetable peeler, gently peel away the skin.
- Cut the peeled potatoes into even 1/2-3/4 inch cubes.
- Place the cubed sweet potatoes into a medium bowl and drizzle with olive oil.
- Blend paprika, garlic powder, salt, and pepper in a smaller bowl; sprinkle over sweet potatoes.
- Preheat the air fryer to 400°F.
- Spray the air fryer basket with cooking spray and add the seasoned sweet potatoes in a single layer.
- Cook for 14-17 minutes, flipping halfway through.
- Let the potatoes rest in the air fryer for 3-5 minutes before serving.
Notes
For best results, chop sweet potatoes ahead of time and store in water in the fridge. Allows for even cooking if cut uniformly.
