- 4 chicken breasts
- 1 cup asparagus, trimmed and chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the chopped asparagus, sun-dried tomatoes, and mozzarella cheese in a bowl.
- Slice a pocket into each chicken breast, leaving the base intact.
- Stuff each chicken breast with the asparagus mixture.
- Season the outside of each breast with olive oil, salt, pepper, garlic powder, and Italian seasoning.
- Place the stuffed chicken breasts in a baking dish.
- Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Let it rest for a few minutes before serving.
