Description

A warm and comforting dish featuring chicken breasts stuffed with asparagus, sun-dried tomatoes, and mozzarella cheese.


Ingredients

Scale
  • 4 chicken breasts
  • 1 cup asparagus, trimmed and chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the chopped asparagus, sun-dried tomatoes, and mozzarella cheese in a bowl.
  3. Slice a pocket into each chicken breast, leaving the base intact.
  4. Stuff each chicken breast with the asparagus mixture.
  5. Season the outside of each breast with olive oil, salt, pepper, garlic powder, and Italian seasoning.
  6. Place the stuffed chicken breasts in a baking dish.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Let it rest for a few minutes before serving.

Notes

Feel free to customize with your favorite vegetables or cheeses. Store leftovers in an airtight container for up to 3 days.
