Description

Ingredients

  • 100g guanciale or pancetta, diced
  • 2 large eggs
  • 50g pecorino cheese, grated
  • 50g parmesan cheese, grated
  • Salt

  • Fresh parsley (for garnish, optional)

Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, about 8-10 minutes.
  2. Crisp the guanciale: In a large skillet, cook the diced guanciale or pancetta over medium heat until it’s crispy and golden brown.
  3. Mix the sauce: In a bowl, whisk together the eggs, grated pecorino, grated parmesan, a pinch of salt, and freshly cracked black pepper until well combined.
  4. Prep the pasta: Once the pasta is cooked, reserve a cup of the pasta water and then drain the spaghetti.
  5. Combine pasta and guanciale: Add the hot spaghetti to the skillet with the crispy guanciale, then remove from heat.
  6. Create the creamy sauce: Pour the egg and cheese mixture over the pasta. Stir quickly to create a creamy sauce, adding reserved pasta water as needed for consistency.
  7. Serve and enjoy: Serve immediately, garnished with additional cheese, a sprinkle of black pepper, and fresh parsley if desired.
