Description

A comforting nest of tender eggs baked over sautéed veggies, melting cheese, and a sprinkle of herbs, perfect for brunch or dinner.


Ingredients

  • 4 eggs
  • 1 cup spinach, chopped
  • 1/2 cup diced tomatoes
  • 1/2 cup bell peppers, diced
  • 1/2 cup cheese (cheddar or feta)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced bell peppers, tomatoes, and spinach; sauté until softened and fragrant.
  3. Layer the sautéed veggies in a baking dish, creating small wells for the eggs. Crack an egg into each well.
  4. Sprinkle your choice of cheese over the dish, and season with salt and pepper to taste.
  5. Bake for 15-20 minutes or until the eggs are set to your desired doneness.
  6. Garnish with fresh herbs and serve warm.
