- 1 cup spinach, chopped
- 1/2 cup diced tomatoes

Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add diced bell peppers, tomatoes, and spinach; sauté until softened and fragrant.
- Layer the sautéed veggies in a baking dish, creating small wells for the eggs. Crack an egg into each well.
- Sprinkle your choice of cheese over the dish, and season with salt and pepper to taste.
- Bake for 15-20 minutes or until the eggs are set to your desired doneness.
- Garnish with fresh herbs and serve warm.
