Description

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups potatoes, cubed
  • 1 cup peas (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the beef and brown it on all sides.
  2. Add the onion, carrots, and celery to the pot and sauté until the vegetables become tender.
  3. Stir in the garlic and cook for another minute.
  4. Pour in the beef broth, adding the tomato paste, thyme, bay leaf, salt, and pepper. Bring to a gentle boil.
  5. Reduce the heat, cover the pot, and let it simmer for about 90 to 120 minutes until the beef is tender.
  6. Add the cubed potatoes and cook for an additional 20 minutes until they are soft. Stir in peas before serving if desired.
  7. Remove the bay leaf before serving and enjoy your beef stew!
