- ½ cup active sourdough starter
- 1 ¼ cups lukewarm water
- 3 cups all-purpose flour
- 1 ½ teaspoons fine sea salt
Instructions
- Combine the active sourdough starter and lukewarm water in a large bowl.
- Stir in the flour, then add the fine sea salt.
- Mix everything together with a fork until the dough becomes stiff.
- Use your hands to bring the dough together into a ball.
- Place the dough ball back into the bowl, cover it, and let it rest for 30 minutes.
- After resting, stretch and fold the dough a few times, then reform it into a ball.
- Cover and let it rise in a warm place overnight or until doubled in size (about 8 hours).
- Turn the dough out onto a floured surface and fold to tighten the shape.
- Let the dough sit for 15 minutes.
- Shape the dough into a ball and place it in a floured proofing basket.
- Cover and let it rise for another 2-3 hours, until doubled in size.
- Preheat your oven to 450°F (232°C).
- Dump the dough ball onto a sheet of parchment and place it into the preheated Dutch oven.
- Cover and bake for 20 minutes.
- Remove the lid and bake for an additional 30 minutes, until deeply browned and crispy.
- Move the loaf to a cooling rack and allow it to cool completely before slicing.
Notes
For added flavor, consider mixing in herbs, cheese, or nuts. Store in a paper bag or towel; freezes well.
