- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- ⅓ cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- Optional: ½ cup chopped walnuts or chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish.
- Grate the zucchini and press gently with a paper towel to remove excess moisture.
- Whisk together the granulated sugar, brown sugar, vegetable oil, and eggs until combined, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined, then fold in the grated zucchini and mix-ins.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow to cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Feel free to experiment with different mix-ins like nuts or chocolate chips. Store leftovers in an airtight container for up to three days.
