Description

Deliciously moist zucchini bars that are perfect for a comforting dessert or snack.


Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • ⅓ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • Optional: ½ cup chopped walnuts or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking dish.
  2. Grate the zucchini and press gently with a paper towel to remove excess moisture.
  3. Whisk together the granulated sugar, brown sugar, vegetable oil, and eggs until combined, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined, then fold in the grated zucchini and mix-ins.
  6. Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Allow to cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Feel free to experiment with different mix-ins like nuts or chocolate chips. Store leftovers in an airtight container for up to three days.
