- 2 medium sweet potatoes, peeled and cubed
- 1 can black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large tortillas
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: sliced avocado, salsa, sour cream
Instructions
- Boil the sweet potatoes: In a pot, bring water to a boil and add the cubed sweet potatoes. Boil until tender, about 10-15 minutes. Once they are tender, drain the water and mash them in a bowl until creamy.
- Mix the filling: In a mixing bowl, combine the mashed sweet potatoes with the drained black beans, shredded cheese, cumin, salt, and pepper. Stir until well combined and creamy.
- Heat the skillet: In a skillet, heat the olive oil over medium heat, allowing it to coat the bottom evenly.
- Prepare the quesadilla: Place one tortilla in the skillet. Using a spoon, spread a generous amount of the sweet potato and black bean filling on half of the tortilla, then fold it over to create a half-moon.
- Cook until golden: Cook for about 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted and gooey.
- Repeat: Continue with the remaining tortillas and filling until everything is cooked.
- Serve hot: Cut each quesadilla into wedges and serve hot. Add your favorite toppings like creamy avocado, zesty salsa, and a dollop of sour cream for that extra touch!
Notes
You can prepare the filling a day in advance and store it in the fridge for quicker dinner prep. Leftovers can be stored in an airtight container in the fridge for up to three days.
