- 1 can black beans, rinsed and drained
- 1 cup rice
- 1 pound sausage, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- Fresh cilantro for garnish (optional)
Instructions
- Heat some oil over medium heat in a large pot. Add the chopped onion and minced garlic, and sauté until softened.
- Add the sliced sausage to the pot and cook until browned.
- Stir in the smoked paprika, cumin, salt, and pepper, letting the spices mingle.
- Add the rice and stir to coat it with the spices.
- Pour in the broth and add the black beans. Bring to a boil.
- Reduce heat, cover, and simmer for about 20 minutes, or until the rice is cooked.
- Fluff it together with a fork and garnish with cilantro before serving.

This dish can be made in advance and stored in an airtight container in the fridge for up to three days.
