- 4 chicken breasts
- 1 cup mozzarella cheese, shredded
- 1 cup cherry tomatoes, halved
- Fresh basil leaves
- Salt and pepper to taste
- 1/2 cup balsamic glaze
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Mix together the mozzarella cheese, cherry tomatoes, and fresh basil in a bowl.
- Cut a pocket into each chicken breast and stuff it with the cheese and tomato mixture.
- Season the chicken breasts with salt and pepper, then heat olive oil in a skillet over medium heat.
- Sear the stuffed chicken breasts on both sides until golden brown, about 3-4 minutes per side.
- Transfer the chicken to a baking dish and drizzle with balsamic glaze.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
- Let rest for a few minutes before slicing and serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Consider adding Italian seasoning for extra flavor.
