Description

A hearty and satisfying meal featuring chipotle honey glazed chicken thighs paired with creamy smoked gouda mashed potatoes.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons chipotle honey
  • Salt and pepper to taste
  • 2 cups potatoes, peeled and chopped
  • 4 ounces smoked gouda cheese, grated
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs liberally with salt, pepper, and chipotle honey.
  3. Place the seasoned chicken thighs in a baking dish and bake for 25-30 minutes.
  4. Boil a pot of salted water and add the chopped potatoes, cooking until tender.
  5. Drain the potatoes and return them to the pot.
  6. Add the smoked gouda, milk, butter, garlic powder, and onion powder to the potatoes.
  7. Mash the potatoes until creamy.
  8. Serve the chicken thighs hot alongside the smoked gouda mashed potatoes.

Notes

For a crispy chicken texture, pan-sear the thighs before baking. Store leftovers in an airtight container for up to 3 days.
