- 4 chicken thighs
- 2 tablespoons chipotle honey
- Salt and pepper to taste
- 2 cups potatoes, peeled and chopped
- 4 ounces smoked gouda cheese, grated
- 1/4 cup milk
- 2 tablespoons butter
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken thighs liberally with salt, pepper, and chipotle honey.
- Place the seasoned chicken thighs in a baking dish and bake for 25-30 minutes.
- Boil a pot of salted water and add the chopped potatoes, cooking until tender.
- Drain the potatoes and return them to the pot.
- Add the smoked gouda, milk, butter, garlic powder, and onion powder to the potatoes.
- Mash the potatoes until creamy.
- Serve the chicken thighs hot alongside the smoked gouda mashed potatoes.
Notes
For a crispy chicken texture, pan-sear the thighs before baking. Store leftovers in an airtight container for up to 3 days.
