Description

This moist cinnamon swirl banana bread is a comforting treat filled with rich cinnamon sugar ribbons and finished with a creamy vanilla glaze. Perfect for breakfast or as a sweet snack.

  • 1/2 cup unsalted butter, melted

  • 1/2 teaspoon salt
  • 1/3 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the batter: In a large bowl, mash the bananas until smooth and creamy. Add the melted butter and mix until combined. Stir in the sugar, eggs, and vanilla extract until the mixture is smooth and slightly glossy.
  2. Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually fold the dry ingredients into the banana mixture. Mix gently just until combined to keep the texture soft and tender.
  3. Make the cinnamon swirl: In a small bowl, combine the brown sugar and cinnamon. This mixture will create those rich, sweet swirls inside the bread.
  4. Layer the batter: Grease a loaf pan and pour in half of the batter. Sprinkle half of the cinnamon sugar mixture evenly over the top. Add the remaining batter and finish with the rest of the cinnamon mixture.
  5. Create the swirl: Use a knife to gently swirl the cinnamon mixture through the batter, creating beautiful ribbons throughout the loaf.
  6. Bake: Bake at 350°F (175°C) for 50–55 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden and slightly crisp.
  7. Add the glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth and creamy. Once the bread has cooled, drizzle the glaze generously over the top, letting it drip down the sides just like in a bakery-style loaf.

Notes

Use very ripe bananas for the sweetest flavor. Store covered to keep it moist for several days.
