- 6 slices brioche or challah bread, cubed
- 3 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 teaspoon salt
- 1/2 cup melted butter
- 1/4 cup granulated sugar for topping
- 1 tablespoon ground cinnamon for topping
- Maple syrup for drizzling
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- Whisk together eggs, milk, vanilla extract, cinnamon, sugar, and salt in a large bowl until smooth and bubbly.
- Add the cubed brioche or challah bread to the mixture and allow to soak for about 10 minutes.
- Fill each muffin cup about 3/4 full with the bread mixture.
- Combine the 1/4 cup of sugar and 1 tablespoon of cinnamon for the topping in a small bowl.
- Sprinkle the topping generously over the muffins and drizzle melted butter on top.
- Bake for 20-25 minutes or until golden brown.
- Let cool slightly before removing from the muffin tin.
- Serve warm with a delightful drizzle of maple syrup.
