Description

Delightful muffins that combine the warm flavors of French toast with a crispy cinnamon sugar topping, perfect for breakfast or any time treat.


Ingredients

  • 6 slices brioche or challah bread, cubed
  • 3 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1/2 cup melted butter
  • 1/4 cup granulated sugar for topping
  • 1 tablespoon ground cinnamon for topping
  • Maple syrup for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Whisk together eggs, milk, vanilla extract, cinnamon, sugar, and salt in a large bowl until smooth and bubbly.
  3. Add the cubed brioche or challah bread to the mixture and allow to soak for about 10 minutes.
  4. Fill each muffin cup about 3/4 full with the bread mixture.
  5. Combine the 1/4 cup of sugar and 1 tablespoon of cinnamon for the topping in a small bowl.
  6. Sprinkle the topping generously over the muffins and drizzle melted butter on top.
  7. Bake for 20-25 minutes or until golden brown.
  8. Let cool slightly before removing from the muffin tin.
  9. Serve warm with a delightful drizzle of maple syrup.
