Description

  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Make the cookie dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until smooth and creamy.
  2. Add dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
  3. Prepare the crumble: In a small bowl, combine flour, brown sugar, and cinnamon. Pour in melted butter and mix until crumbly and slightly clumpy.
  4. Chill the dough: Cover and chill the cookie dough for about 20 minutes.
  5. Shape the cookies: Scoop dough into large balls and place them on a lined baking sheet. Gently flatten each one slightly.
  6. Add crumble topping: Generously sprinkle the cinnamon crumble over each cookie, pressing lightly so it sticks.
  7. Bake at 350°F (175°C) for 12–14 minutes until edges are lightly golden and centers remain soft.
  8. Add the glaze: Whisk together powdered sugar, milk, and vanilla until smooth, then drizzle over the cookies.
