Instructions
- Make the cookie dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until smooth and creamy.
- Add dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
- Prepare the crumble: In a small bowl, combine flour, brown sugar, and cinnamon. Pour in melted butter and mix until crumbly and slightly clumpy.
- Chill the dough: Cover and chill the cookie dough for about 20 minutes.
- Shape the cookies: Scoop dough into large balls and place them on a lined baking sheet. Gently flatten each one slightly.
- Add crumble topping: Generously sprinkle the cinnamon crumble over each cookie, pressing lightly so it sticks.
- Bake at 350°F (175°C) for 12–14 minutes until edges are lightly golden and centers remain soft.
- Add the glaze: Whisk together powdered sugar, milk, and vanilla until smooth, then drizzle over the cookies.
Notes
Chill the dough to prevent spreading and avoid overbaking for soft cookies.
