- 1 package Oreo cookies (crushed)
- 1/2 cup unsalted butter (melted)
- 2 packages (8 oz each) cream cheese (softened)
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9×9 inch baking pan.
- Mix the crushed Oreo cookies with melted butter until fully combined, and press this delightful mixture firmly into the bottom of the prepared pan.
- In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition until creamy.
- Stir in the sour cream, blending until the batter is smooth.
- Pour the chocolate cheesecake batter over the Oreo crust.
- Bake for 30-35 minutes, or until the center is set but still slightly jiggly.
- Allow the bars to cool completely at room temperature.
- For ganache, heat the heavy cream until it simmers, then pour it over the chocolate chips and stir until smooth.
- Drizzle the ganache over the cooled cheesecake bars, and refrigerate for at least 4 hours before slicing.
Notes
These bars can be made a day in advance for better flavor. Store leftovers in an airtight container in the refrigerator for up to one week.
