Description

A delightful twist on classic gingerbread, perfect for fall afternoons and family gatherings.

Ingredients

Scale
  • 2 1/2 cups unbleached flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 3/4 cup molasses
  • 1 cup brown sugar (packed)
  • 1 stick butter (softened)
  • 1/2 teaspoon salt
  • 1/4 cup strong coffee
  • 3/4 cup milk
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 cup powdered sugar
  • 1/8 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1 tablespoon coffee

Instructions

  1. Prepare your bundt pan: Spray or grease your bundt pan thoroughly to ensure easy release.
  2. Preheat your oven: Set your oven to 350°F (175°C) and let it warm up while you prepare the batter.
  3. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, cardamom, nutmeg, and cloves.
  4. Blend the wet ingredients: In another bowl, beat together the softened butter and brown sugar until creamy and fluffy. Add in the molasses, eggs, milk, and strong coffee, mixing well until everything is combined smoothly.
  5. Combine the mixtures: Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined.
  6. Fill the bundt pan: Pour the batter into the prepared bundt pan and spread it evenly.
  7. Bake your cake: Bake for about 55 minutes, or until a knife inserted in the center comes out clean.
  8. Cool and unmold: Allow the cake to cool in the pan for about 10 minutes before inverting onto a wire rack to cool completely.
  9. Drizzle with glaze: In a small bowl, mix the powdered sugar, coffee, 1/8 teaspoon salt, and 1/8 teaspoon cinnamon until smooth. Drizzle it generously over the cooled bundt cake before serving.

Notes

You can add nuts, citrus zest, or dried fruits for customization. Unsweetened applesauce can substitute butter for a lighter version.
