Ingredients

  • 1/4 cup protein powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • Optional: Sweetener to taste (like erythritol or monk fruit)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the almond flour, protein powder, baking powder, and salt.
  3. In another bowl, whisk together the eggs, applesauce, almond milk, and vanilla until smooth.
  4. Pour the wet ingredients into the dry mixture and mix until just combined.
  5. If desired, add sweetener to taste.
  6. Divide the batter evenly among the muffin cups, filling each a little over halfway.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let the muffins cool for a few minutes in the tin before transferring them to a wire rack.
