- 3 large eggs
- 1/4 cup unsweetened applesauce
- 1/4 cup almond milk
- 1 tsp vanilla extract
- Optional: Sweetener to taste (like erythritol or monk fruit)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the almond flour, protein powder, baking powder, and salt.
- In another bowl, whisk together the eggs, applesauce, almond milk, and vanilla until smooth.
- Pour the wet ingredients into the dry mixture and mix until just combined.
- If desired, add sweetener to taste.
- Divide the batter evenly among the muffin cups, filling each a little over halfway.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Let the muffins cool for a few minutes in the tin before transferring them to a wire rack.
Notes
