Description

A vibrant Mediterranean Orzo Salad packed with fresh ingredients, perfect for warm days or easy weeknight dinners.


Ingredients

  • 1 cup orzo pasta
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • Fresh herbs (parsley, basil, or oregano)
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions; drain and let cool.
  2. In a large bowl, combine the cooked orzo, cucumber, cherry tomatoes, red onion, olives, and feta cheese.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  4. Pour the vinaigrette over the salad and toss to combine.
