Description

A comforting and hearty slow cooker casserole filled with savory beef, creamy cheese, and hints of garlic.


Ingredients

Scale
  • 1 pound ground beef
  • 4 cups potatoes, diced
  • 1 can (15 oz) beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 can (28 oz) diced tomatoes with juices
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon chili powder (optional)

Instructions

  1. Add the ground beef to a slow cooker.
  2. Toss in the diced potatoes, beans, and corn.
  3. Add the shredded cheese.
  4. Pour in the can of diced tomatoes with their juices.
  5. Add the chopped onion and minced garlic.
  6. Season generously with salt, pepper, and chili powder if desired.
  7. Stir everything together until well combined.
  8. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  9. Once cooked, stir again to incorporate all the flavors and serve hot.

Notes

Make-ahead by assembling the casserole the night before. Substitute ingredients as desired for customization.
