- 1 pound ground beef
- 4 cups potatoes, diced
- 1 can (15 oz) beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups shredded cheese (cheddar or your choice)
- 1 can (28 oz) diced tomatoes with juices
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon chili powder (optional)
Instructions
- Add the ground beef to a slow cooker.
- Toss in the diced potatoes, beans, and corn.
- Add the shredded cheese.
- Pour in the can of diced tomatoes with their juices.
- Add the chopped onion and minced garlic.
- Season generously with salt, pepper, and chili powder if desired.
- Stir everything together until well combined.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, stir again to incorporate all the flavors and serve hot.
Notes
Make-ahead by assembling the casserole the night before. Substitute ingredients as desired for customization.
