Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until they are golden brown and cooked through, about 6-7 minutes per side. Remove the chicken and set aside.
  3. In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
  4. Next, add the halved cherry tomatoes and fresh spinach. Cook until the spinach is wilted.
  5. Lower the heat and stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Bring the mixture to a gentle simmer and let it thicken slightly.
  6. Return the chicken to the skillet, making sure to coat it well with the creamy sauce. Let it cook for an additional minute or two to reheat.
  7. Garnish with fresh basil before serving.
