- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh basil, for garnish
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until they are golden brown and cooked through, about 6-7 minutes per side. Remove the chicken and set aside.
- In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
- Next, add the halved cherry tomatoes and fresh spinach. Cook until the spinach is wilted.
- Lower the heat and stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Bring the mixture to a gentle simmer and let it thicken slightly.
- Return the chicken to the skillet, making sure to coat it well with the creamy sauce. Let it cook for an additional minute or two to reheat.
- Garnish with fresh basil before serving.
