Description

A comforting and creamy blend of pasta, mushrooms, and spinach in a luscious sauce, perfect for cozy meals.

Ingredients

Scale
  • 8 oz Pasta (Any type like spaghetti or penne)
  • 8 oz Mushrooms (Fresh varieties such as cremini or shiitake)
  • 2 tbsp Olive Oil (Can substitute with butter)
  • 23 cloves Garlic (Freshly minced)
  • 2 cups Fresh Spinach (Can substitute with kale)
  • 1 cup Heavy Cream (Substitute with half-and-half or coconut milk for less calories)
  • 1/2 cup Parmesan Cheese (Can use nutritional yeast for a vegan option)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the Pasta: Begin by boiling a large pot of salted water. Add your pasta and cook according to package directions until al dente. Reserve about 1 cup of the pasta water and drain the rest. Set the pasta aside.
  2. Sauté the Mushrooms: In the same skillet, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add the sliced mushrooms and sauté for about 5-7 minutes, or until they are tender and golden.
  3. Add Garlic: Toss in the freshly minced garlic and let its aroma fill the air, cooking for an additional 30 seconds—just until fragrant.
  4. Incorporate the Spinach: Add in the fresh spinach, carefully stirring until it wilts and blends with the mushrooms. This should take about 1-2 minutes.
  5. Create the Creamy Sauce: Pour in the heavy cream, stirring well to combine. Allow it to gently simmer and thicken for a few minutes.
  6. Mix in Pasta and Cheese: Fold in the cooked pasta and 1/2 cup of Parmesan cheese. If the sauce seems too thick, gradually add the reserved pasta water until you reach your desired creaminess.
  7. Season to Taste: Finish this comforting dish by seasoning with salt and freshly cracked black pepper. Give it a good stir, allowing all the flavors to meld beautifully.
  8. Serve and Enjoy: Serve warm, garnished with extra Parmesan, if desired. Enjoy the warm, creamy bliss you’ve created!

Notes

Easily customizable; can add grilled chicken or vegan options as preferred. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
