Instructions
- Cook the Pasta: Begin by boiling a large pot of salted water. Add your pasta and cook according to package directions until al dente. Reserve about 1 cup of the pasta water and drain the rest. Set the pasta aside.
- Sauté the Mushrooms: In the same skillet, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add the sliced mushrooms and sauté for about 5-7 minutes, or until they are tender and golden.
- Add Garlic: Toss in the freshly minced garlic and let its aroma fill the air, cooking for an additional 30 seconds—just until fragrant.
- Incorporate the Spinach: Add in the fresh spinach, carefully stirring until it wilts and blends with the mushrooms. This should take about 1-2 minutes.
- Create the Creamy Sauce: Pour in the heavy cream, stirring well to combine. Allow it to gently simmer and thicken for a few minutes.
- Mix in Pasta and Cheese: Fold in the cooked pasta and 1/2 cup of Parmesan cheese. If the sauce seems too thick, gradually add the reserved pasta water until you reach your desired creaminess.
- Season to Taste: Finish this comforting dish by seasoning with salt and freshly cracked black pepper. Give it a good stir, allowing all the flavors to meld beautifully.
