Description

A warm and comforting dish featuring shrimp in a creamy sauce with sun-dried tomatoes and spinach.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups spinach, fresh
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Toss in the shrimp and cook until they turn pink, about 3-4 minutes.
  4. Stir in the sun-dried tomatoes and fresh spinach, allowing them to meld together.
  5. Pour in the heavy cream and add the grated Parmesan cheese; stir until the sauce thickens and becomes creamy.
  6. Season with salt and pepper to taste.
  7. Serve the luscious shrimp over mashed potatoes or pasta, garnished with fresh basil.
