A bold, spicy one-pot classic, this jambalaya features juicy shrimp, savory smoked sausage, and fluffy rice in a rich tomato base.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 12 oz smoked turkey sausage, sliced
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • 2 green onions, sliced

Instructions

  1. Sear the sausage: Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sliced turkey sausage and cook until browned and slightly crispy. Remove and set aside.
  2. Sauté the vegetables: In the same pan, add the onion, bell peppers, and celery. Cook until soft and fragrant, about 5 minutes. Add the garlic and cook for another minute.
  3. Build the flavor base: Stir in the diced tomatoes, rice, chicken broth, paprika, thyme, oregano, cayenne, salt, and pepper. Mix everything well to combine all the flavors.
  4. Simmer the rice: Return the sausage to the pot. Bring the mixture to a gentle boil, then reduce the heat, cover, and let it simmer for about 20 minutes until the rice is tender and has absorbed the flavorful broth.
  5. Add the shrimp: Gently stir in the shrimp and cook for 5–7 minutes until they turn pink and tender. Be careful not to overcook them.
  6. Finish and serve: Remove from heat and sprinkle sliced green onions over the top. Fluff the rice lightly and serve warm.

Let the jambalaya rest for a few minutes before serving to enhance the flavors.
