Description

Effortless chicken fajitas cooked in the crockpot; perfect for busy weeknights and family meals.


Ingredients

  • 2 pounds of chicken breast
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 packet of fajita seasoning
  • Salt and pepper to taste
  • Tortillas (for serving)

Instructions

  1. Place the chicken breasts in your crockpot, layering them neatly.
  2. Add the sliced bell pepper and onion on top of the chicken.
  3. Sprinkle the fajita seasoning generously over the top.
  4. Season with salt and pepper to taste.
  5. Cover the crockpot with its lid and cook on low for 360 minutes or on high for 240 minutes.
  6. Once done, carefully shred the chicken using two forks and stir it with the vegetables.
  7. Serve with warm tortillas and your favorite toppings.

Notes

Feel free to add toppings like sour cream, guacamole, or cilantro. Leftovers can be stored in an airtight container for up to 4 days.
