Description
A comforting bowl of noodles enveloped in a creamy, dreamy peanut sauce, packed with fresh veggies and bursting with flavor.
Ingredients
Scale
- 2 tablespoons vegetable oil
- 8 ounces linguine (or ramen, spaghetti, fettuccini)
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, julienned
- 1/4 cup soy sauce (or Tamari, or Coconut Aminos)
- 2 tablespoons honey (or agave syrup, or brown sugar)
- 1/2 cup peanut butter
- 1 tablespoon chili sauce
- 1/4 cup chopped peanuts
- 2 green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- Start by cooking the noodles according to package instructions. Once they’re perfectly al dente, drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic, diced bell pepper, and julienned carrot. Sauté everything together for about 4-5 minutes until softened and fragrant.
- In a separate bowl, whisk together the soy sauce, honey, peanut butter, and chili sauce until you achieve a smooth consistency.
- Add the cooked noodles to the skillet filled with sautéed veggies. Drizzle the luscious sauce over the noodles and toss everything together until well combined and each strand is coated in flavor.
- Serve your beautiful noodles in bowls, topped with chopped peanuts, green onions, and a sprinkle of sesame seeds.
Notes
Make the peanut sauce ahead of time and store it in the fridge for up to a week. Leftovers can be kept for up to three days. Reheat on stovetop with water if needed.
