Description

A vibrant and flavorful Greek Chicken Kabobs recipe, perfect for weeknight dinners or grilling gatherings.

Ingredients

Scale
  • 1 pound of chicken breast (cubed)
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic (minced)
  • 1 tablespoon oregano
  • Salt and pepper to taste
  • 1 bell pepper (cubed)
  • 1 red onion (cubed)
  • Skewers (metal or soaked wooden)

Instructions

  1. Mix together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
  2. Add the cubed chicken to the marinade, ensuring it’s well coated. Cover and refrigerate for at least 60 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken, bell peppers, and onion onto the skewers, alternating between ingredients.
  5. Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and charred.
  6. Serve on a platter, garnished with fresh herbs, and enjoy!

Notes

Marinate the chicken overnight for deeper flavor; leftover kabobs can be stored in an airtight container in the fridge for up to 3 days.
