Ingredients

  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt and pepper to taste
  • Skewers (soaked in water if wooden)
  • Fresh cilantro for garnish

Instructions

  1. Mix the coconut milk, red curry paste, fish sauce, brown sugar, lime juice, garlic, and ginger to create a creamy marinade.
  2. Add the chicken cubes to the marinade, covering them entirely, then seal and refrigerate for at least 1 hour or overnight.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated chicken onto the skewers, spacing them evenly.
  5. Grill the skewers for 6-8 minutes on each side until cooked through and charred.
  6. Season with salt and pepper to taste before serving.
