Description

A comforting bowl of grilled udon noodles tossed with fresh vegetables and savory flavors, perfect for busy weeknights.


Ingredients

  • 200g udon noodles
  • 1 cup mixed vegetables (bell peppers, carrots, broccoli)
  • 1 cup mushrooms (sliced)
  • 200g protein (chicken, shrimp, or tofu)
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon mirin (optional)
  • 1 clove garlic (minced)
  • 1 teaspoon ginger (grated)
  • 1 green onion (sliced for garnish)

Instructions

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large pan, heat the sesame oil over medium heat.
  3. Add the minced garlic and grated ginger, sauté for 1 minute until fragrant.
  4. Add your choice of protein and cook until browned and cooked through.
  5. Stir in the mixed vegetables and mushrooms; cook for about 3-4 minutes until tender.
  6. Add the cooked udon noodles to the pan.
  7. Pour in the soy sauce and mirin (if using).
  8. Toss everything together and cook for an additional 1-2 minutes.
  9. Serve hot, garnished with green onions.

Notes

Prep veggies and protein in advance. Store leftovers in an airtight container in the fridge for up to 3 days.
