- 1 pound boneless, skinless chicken breast
- 1 can black beans, rinsed and drained
- 1 cup brown rice, uncooked
- 1 cup corn (frozen or fresh)
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro, for garnish

Instructions
- In a medium saucepan, add 1 cup of brown rice and 2 cups of water. Bring to a boil, then reduce to a simmer. Cover and cook for 45 minutes or until tender, then fluff with a fork.
- While the rice is cooking, heat a skillet over medium heat. Season the chicken breast on both sides with chili powder, cumin, salt, and pepper. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let it rest for a few minutes before slicing.
- In your meal prep containers, layer in the cooked rice, sliced chicken, black beans, corn, and diced bell pepper to create a vibrant feast for the eyes.
- Top each bowl with fresh avocado slices and a sprinkle of cilantro. If you’re feeling adventurous, add a dollop of salsa or a splash of hot sauce for that zesty kick!
