Ingredients

  • 1 can black beans or kidney beans
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and bell pepper; sauté until softened.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add ground turkey, breaking it up with a spoon, and cook until browned.
  5. Stir in chili powder, cumin, salt, and pepper, coating the turkey.
  6. Add the beans and diced tomatoes, stirring everything together.
  7. Bring to a simmer and cook for 20-30 minutes, stirring occasionally.
