- 6 medium potatoes, thinly sliced
- 2 cups heavy cream
- 1 cup grated cheddar cheese
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons butter
- 1 tablespoon fresh thyme (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a saucepan over medium heat. Add the chopped onions and minced garlic, cooking until softened and fragrant.
- Combine the heavy cream, salt, pepper, and thyme (if using) in a mixing bowl.
- Layer half of the sliced potatoes in a greased baking dish. Pour half of your creamy mixture over the potatoes.
- Sprinkle half of the grated cheddar cheese on top, then layer the remaining potatoes over the cheese.
- Pour the rest of the cream mixture over this second layer of potatoes.
- Finish by sprinkling the remaining cheese on top.
- Cover with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the potatoes are tender and golden brown.
- Let it cool slightly before serving.

For make-ahead convenience, assemble in advance and refrigerate. Add extra baking time if chilled.
