Ingredients

- 4 Chicken breasts
- 1/4 cup Honey
- 1/4 cup Lime juice (about 2–3 limes)
- 2 cloves Garlic, minced
- 2 tablespoons Olive oil
- Salt and pepper, to taste
- 1 ripe Mango, diced
- 1/2 Red onion, finely chopped
- 1/4 cup fresh Cilantro, chopped
- 1 Jalapeno, finely chopped (optional)
Instructions
- Combine honey, lime juice, minced garlic, olive oil, salt, and pepper in a bowl to create a marinade.
- Place the chicken breasts in the marinade, ensuring they’re fully coated. Let marinate for at least 30 minutes.
- Preheat your grill (or oven) to medium-high heat.
- Grill (or bake) the chicken for about 6-7 minutes per side, or until cooked through.
- Prepare the mango salsa by dicing the mango, red onion, and jalapeno (if using). Mix with chopped cilantro in a bowl.
- Serve the grilled chicken topped with mango salsa. Enjoy with rice, salad, or warm tortillas!
Notes
Marinate the chicken the night before for deeper flavors. Leftovers can be stored for up to 3 days in an airtight container.
