Description

A delightful and easy recipe for honey roasted colorful carrots, perfect for busy weeknights and family meals.


Ingredients

  • 1 pound colorful carrots (rainbow carrots)
  • 2 tbsp butter
  • 2 tbsp honey
  • 2 tbsp brown sugar
  • Fresh thyme (to taste)
  • Salt & pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse, scrub, and trim the colorful carrots.
  3. In a small saucepan, melt the butter over low heat.
  4. Stir in the honey and brown sugar until it becomes a silky mixture.
  5. Place the carrots on a baking sheet and drizzle the honey mixture over them.
  6. Season with salt, pepper, and fresh thyme.
  7. Roast in the preheated oven for about 20-25 minutes.
  8. Preheat your air fryer to 375°F (190°C).
  9. Toss the carrots in the honey mixture, ensuring they are evenly coated.
  10. Place the carrots in a single layer in the air fryer basket.
  11. Cook for about 15-18 minutes, shaking halfway through.
