Description

A delightful fusion of sweet peaches and spicy jalapeños roasted with chicken, bringing comfort and nostalgia to your dining table.


Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapeños, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and black pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set aside.
  6. Add the diced jalapeños and peaches to the skillet and cook for 2-3 minutes.
  7. Whisk together the honey, apple cider vinegar, water, and cornstarch until smooth.
  8. Pour the honey mixture over the jalapeños and peaches and stir well.
  9. Return the chicken to the skillet, spooning some sauce over the top.
  10. Transfer the skillet to the oven and bake for 20-25 minutes.
  11. Remove from the oven and let rest for a few minutes before serving.

Notes

Pair with rice or mashed potatoes for a delicious meal. Leftovers can be stored for up to three days.
