- 1/2 cup powdered sugar
- 1 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1 cup fresh blueberries
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup lemon juice
- 2 tablespoons all-purpose flour
- 1 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- Combine 2 cups flour, powdered sugar, softened butter, and salt in a mixing bowl. Mix until crumbly.
- Press the mixture firmly into the bottom of the prepared pan to form the crust.
- Bake for 20 minutes or until the crust is lightly golden.
- Whisk together granulated sugar, eggs, 1/4 cup lemon juice, lemon zest, 2 tablespoons flour, and baking powder until smooth.
- Fold in the fresh blueberries gently.
- Pour the mixture over the baked crust, spreading it evenly.
- Return to the oven and bake for an additional 25-30 minutes until set.
- Cool completely before cutting into bars.
- Serve and enjoy with a cup of tea.
