Description

Delightful Lemon Blueberry Shortbread Bars that combine buttery shortbread with a zesty lemon filling and fresh blueberries, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup lemon juice
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. Combine 2 cups flour, powdered sugar, softened butter, and salt in a mixing bowl. Mix until crumbly.
  3. Press the mixture firmly into the bottom of the prepared pan to form the crust.
  4. Bake for 20 minutes or until the crust is lightly golden.
  5. Whisk together granulated sugar, eggs, 1/4 cup lemon juice, lemon zest, 2 tablespoons flour, and baking powder until smooth.
  6. Fold in the fresh blueberries gently.
  7. Pour the mixture over the baked crust, spreading it evenly.
  8. Return to the oven and bake for an additional 25-30 minutes until set.
  9. Cool completely before cutting into bars.
  10. Serve and enjoy with a cup of tea.
