- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ cup cotija cheese, crumbled
- 1 lime, juiced
- 1 tsp chili powder
- ¼ tsp smoked paprika

- 2 tbsp chopped cilantro
Instructions
- Prepare the Corn: If using fresh corn, shuck the ears and remove the kernels. Make sure the corn is dry to allow the dressing to stick perfectly.
- Mix the Dressing: In a medium bowl, combine the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and salt. Stir until smooth and creamy, letting the flavors mingle.
- Combine Corn and Dressing: In a large bowl, add the corn kernels and pour the dressing over them. Toss gently until the corn is well-coated with that luscious mixture.
- Add the Cheese and Cilantro: Gently fold in the crumbled cotija cheese and chopped cilantro, letting the freshness and richness shine through the blend.
- Garnish: Serve immediately, garnishing with an extra squeeze of lime and a sprinkle of chili powder for that extra pop of flavor.
