Description

A warm bowl of Mongolian Ground Beef Noodles, combining savory, sweet, and a hint of spice for a comforting weeknight dinner.

Ingredients

Scale
  • 1 lb lean ground beef
  • 4 tsp fresh grated ginger
  • 6 cloves garlic, minced
  • ½ cup brown sugar
  • ½ cup low-sodium beef broth
  • ½ cup low-sodium soy sauce
  • ¼ cup hoisin sauce
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 8 oz linguine or fettuccine noodles
  • 2 tbsp cornstarch
  • ¼ cup water
  • 4 green onions, sliced

Instructions

  1. Cook the ground beef: Heat a skillet over medium-high heat. Add the ground beef and cook until browned, about 5 minutes. Stir in the ginger and garlic during the last 2 minutes of cooking for that aromatic boost.
  2. Prepare the noodles: While the beef cooks, bring a pot of salted water to a boil. Add the noodles and boil according to the package instructions until al dente. Drain and set aside.
  3. Make the sauce: Drain any excess fat from the beef. Stir in the brown sugar, beef broth, soy sauce, hoisin sauce, black pepper, and red pepper flakes (if using). Mix well until fully combined.
  4. Thicken the sauce: In a small bowl, whisk together the cornstarch and water to create a slurry. Pour the slurry into the beef mixture, stirring constantly. Bring the mixture to a simmer and cook until it thickens, about 2-3 minutes.
  5. Combine noodles and beef: Add the cooked noodles to the skillet and toss them in the sauce to coat evenly. Allow the noodles to sit for 2-3 minutes, soaking up all the delicious flavors.
  6. Garnish and serve: Serve hot, garnished with sliced green onions for a pop of freshness. Enjoy this hearty, satisfying meal that warms both your stomach and soul!

Notes

Make ahead by preparing the sauce and storing it; it can be refrigerated. Leftovers can be stored for up to 3 days in an airtight container.
