Ingredients

  • 2 (6–8 oz) filet mignon steaks, 1.5–2 inches thick
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp avocado oil
  • 3 tbsp unsalted butter
  • 2 garlic cloves, crushed
  • 2 sprigs fresh thyme

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Pat the steaks dry with paper towels; season generously with kosher salt and black pepper, then let the steaks rest for 30 minutes.
  3. Heat avocado oil in a heavy skillet over medium-high heat until hot. Sear the steaks for 2 minutes on each side.
  4. Add butter, crushed garlic, and fresh thyme to the skillet; baste the steaks with the melted butter for about 1 minute.
  5. Transfer the skillet to the preheated oven and bake for 8 to 12 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare.
  6. Remove the skillet from the oven and allow steaks to rest for 10 minutes before slicing.
