Description

Deliciously crispy on the outside and tender within, these Parmesan Roasted Potatoes are perfect for family dinners or a cozy weeknight meal.


Ingredients

  • 2 lbs of potatoes (such as Russet or Yukon Gold)
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the potatoes into wedges.
  3. Toss the potato wedges with olive oil, garlic powder, salt, and pepper until evenly coated.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Sprinkle grated Parmesan cheese over the potatoes.
  6. Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy.
  7. Garnish with fresh parsley before serving.

Notes

Make-ahead by preparing the potatoes in advance and storing in the fridge until ready to roast. Store leftovers in an airtight container for up to 3 days.
