  • 2 1/2 cups (350 g) all-purpose flour
  • 2/3 cup (140 g) granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups (280 g) cold unsalted butter, cut into small cubes
  • 1/4 cup (50 g) brown sugar, preferably dark
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (35 g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 cups pitted, peeled, and chopped peaches (about 78 peaches)
  • 6 tablespoons (90 ml) heavy cream
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven: Set your oven to 350°F (180°C). Grease a 9×13-inch pan or line it with parchment paper.
  2. Make the crust: In a food processor, combine the flour, granulated sugar, and salt. Add the cold cubed butter and pulse until crumbly. Press the remaining crumbs into the pan and bake for about 15 minutes.
  3. Prepare the streusel topping: Add brown sugar to the remaining crumb mixture and toss until you form large clumps.
  4. Make the filling: In a large bowl, mix together granulated sugar, flour, cinnamon, and salt. Toss in the chopped peaches. In a separate bowl, mix heavy cream and vanilla extract, then stir into the peach mixture.
  5. Assemble the bars: Pour the peach mixture over the warm crust and sprinkle the streusel topping over it.
  6. Bake: Return to the oven and bake for about 45 minutes, until bubbly and golden brown.
  7. Cool and refrigerate: Let cool completely, then refrigerate for at least 2 hours before cutting into squares.
  8. Enjoy: Keep in the refrigerator for about 3 days.
