- 1 cup creamy peanut butter
- 1 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup jelly or jam (strawberry, grape, or raspberry)
- Optional: powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the creamy peanut butter, brown sugar, egg, vanilla extract, baking soda, and salt in a large mixing bowl. Beat until smooth and creamy.
- Grease a muffin tin or line it with mini cupcake liners for easy removal.
- Scoop about one tablespoon of dough into each muffin tin cup, pressing down slightly to create a well for the jelly.
- Bake for 10-12 minutes until the edges are golden brown and the tops are tender.
- Remove from the oven and cool for a couple of minutes; then press the centers down gently to form little cups.
- Dollop your choice of jelly into each cookie cup and dust with powdered sugar if desired. Enjoy!
Notes
The cookie dough can be made a day in advance. Store in an airtight container at room temperature for up to 3-4 days.
