Description

Warm, rich, and delightful cookie cups filled with creamy peanut butter and sweet jelly, perfect for a cozy treat.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup jelly or jam (strawberry, grape, or raspberry)
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the creamy peanut butter, brown sugar, egg, vanilla extract, baking soda, and salt in a large mixing bowl. Beat until smooth and creamy.
  3. Grease a muffin tin or line it with mini cupcake liners for easy removal.
  4. Scoop about one tablespoon of dough into each muffin tin cup, pressing down slightly to create a well for the jelly.
  5. Bake for 10-12 minutes until the edges are golden brown and the tops are tender.
  6. Remove from the oven and cool for a couple of minutes; then press the centers down gently to form little cups.
  7. Dollop your choice of jelly into each cookie cup and dust with powdered sugar if desired. Enjoy!

Notes

The cookie dough can be made a day in advance. Store in an airtight container at room temperature for up to 3-4 days.
