Description

Delicious and crispy pineapple fritters that are quick and easy to make, perfect for any gathering.

Ingredients

Scale
  • 1 can of pineapple rings (or fresh pineapple slices)
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup milk
  • 1 large egg
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. If using fresh pineapple, slice the pineapple into rings and set aside. Remember, feel free to use canned pineapple rings if you’re in a pinch!
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon. Let the cozy aroma fill your kitchen as you mix these dry ingredients together.
  3. In another bowl, whisk together the milk and egg until the mixture is smooth. This is where the magic really starts!
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are perfectly fine and will lead to a tender fritter.
  5. Heat oil in a deep fryer or large skillet over medium heat. You want enough oil so that the fritters can float, but keep an eye on temperature to avoid burning.
  6. Dip each pineapple ring into the batter, allowing the excess to drip off. Carefully place the battered rings into the hot oil; the sizzle will make your heart sing!
  7. Fry until golden brown, about 2-3 minutes per side. Try to resist the urge to turn them too soon, as you want that perfect golden color.
  8. Remove and drain on paper towels to absorb excess oil, and breathe in that sweet, fried aroma!
  9. Dust with powdered sugar before serving, creating a snowy cap for these delicious treats.

Notes

Feel free to customize with your favorite spices or toppings. Store leftovers in an airtight container for up to 2 days.
