- 1 can diced tomatoes (14.5 oz)
- 2 cloves garlic (minced)
- 1 cup fresh spinach (packed)
- 1/2 cup grated Parmesan cheese (plus extra for serving)
- Salt (to taste)
- Pepper (to taste)
- Olive oil (for cooking)
Instructions
- Cook the pasta: Start by boiling a pot of salted water and cooking the pasta according to package instructions. Once done, drain and set aside.
- Sizzle the sausage: In a skillet, heat a drizzle of olive oil over medium heat. Add the Italian sausage, breaking it up with a spatula. Cook until beautifully browned, about 5-7 minutes.
- Add the garlic: Stir in the minced garlic and let it cook for another minute until fragrant and golden.
- In with the tomatoes: Pour in the can of diced tomatoes (including the juice) and bring the mixture to a gentle simmer. Allow it to bubble happily for about 5-10 minutes.
- Combine everything: Toss in the cooked pasta and fresh spinach, stirring well until the spinach wilts and everything is combined.
- Season it right: Add salt and pepper to taste, adjusting to your preference.
- Finish with cheese: Before serving, sprinkle on the grated Parmesan cheese, creating a beautifully creamy finish.
