Description

Delight in these lightened-up, creamy coconut cheesecake bars that are perfect for any gathering.


Ingredients

  • 1 cup graham cracker crumbs
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1 package (8 oz) reduced-fat cream cheese, softened
  • 3/4 cup Greek yogurt, plain
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut
  • 1 tablespoon coconut milk (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. Combine the graham cracker crumbs, melted coconut oil, and honey until well mixed. Press this mixture into the bottom of your prepared baking dish to form a lovely crust.
  3. Beat the softened cream cheese until smooth and creamy in a mixing bowl. Add in the Greek yogurt, powdered sugar, and vanilla extract, then beat again until all ingredients are well combined.
  4. Stir in the shredded coconut. If the mixture feels too thick, add a splash of coconut milk to achieve your desired consistency.
  5. Pour the cheesecake mixture over your graham cracker crust, spreading it evenly with a spatula for that perfect finish.
  6. Bake for about 25-30 minutes, or until set in the center. Let them cool completely before transferring to the refrigerator for at least 120 minutes to chill and firm up.
