Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 cups sweet potatoes, peeled and diced
  • 1 cup carrots, sliced
  • 1 cup tomatoes, diced (fresh or canned)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Add the chicken thighs, sweet potatoes, carrots, tomatoes, onion, and garlic to a slow cooker.
  2. Pour in the chicken broth, allowing it to coat the ingredients.
  3. Sprinkle in the thyme and rosemary, along with salt and pepper.
  4. Stir to combine all ingredients, ensuring everything is well-coated.
  5. Cover and cook on low for 360–480 minutes or on high for 240–300 minutes.
  6. About 30 minutes before serving, add the heavy cream and stir gently.
  7. Serve warm and enjoy with crusty bread.
