Description

Ingredients

  • 1.5 lbs small red potatoes
  • 3 cloves garlic, minced
  • 4 tablespoons butter
  • 1 cup shredded cheese (your favorite melting cheese)
  • Fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes: Place your small red potatoes in a pot and cover with water. Bring to a boil and let them simmer until they’re slightly soft, about 15-20 minutes.
  2. Smash the potatoes: Once boiled, drain the potatoes and place them on a baking sheet lined with parchment paper. Using a fork or a potato masher, gently smash each potato.
  3. Melt the garlic butter: In a small saucepan, melt the butter over low heat. Add the minced garlic and cook until fragrant, about 1-2 minutes.
  4. Preheat the oven: While melting the butter, preheat your oven to 400°F (200°C).
  5. Baste the potatoes: Drizzle your delicious garlic butter over each smashed potato, ensuring they are well-coated.
  6. Top with cheese and chives: Sprinkle the mashed potatoes generously with shredded cheese and chopped chives.
  7. Roast: Place the baking sheet in the oven and roast the potatoes for about 25-30 minutes, or until they are golden and crispy.
