Description

Tender chicken breasts filled with creamy mushroom and cheese stuffing, perfect for cozy dinners.


Ingredients

  • 2 chicken breasts
  • 1 cup mushrooms, chopped
  • 1 cup cheese (mozzarella or cheddar), shredded
  • 1 tablespoon garlic, minced
  • 2 tablespoons mustard
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a pan over medium heat, add mushrooms, and sauté until softened, about 5 minutes.
  3. Mix the sautéed mushrooms, cheese, minced garlic, salt, and pepper for the filling.
  4. Cut a pocket into each chicken breast and stuff with the mushroom mixture. Secure openings with toothpicks.
  5. Sear the stuffed chicken breasts on both sides until golden brown, about 4 minutes per side.
  6. Combine heavy cream and mustard, then pour over the chicken in the pan.
  7. Transfer the pan to the oven and bake for 25-30 minutes until cooked through.
  8. Remove from the oven, let rest for a few minutes, and serve warm.

Notes

For best results, let the chicken rest before slicing to keep it juicy. Store leftovers in the fridge for up to 3 days.
