- 2 chicken breasts
- 1 cup mushrooms, chopped
- 1 cup cheese (mozzarella or cheddar), shredded
- 1 tablespoon garlic, minced
- 2 tablespoons mustard
- 1/2 cup heavy cream
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a pan over medium heat, add mushrooms, and sauté until softened, about 5 minutes.
- Mix the sautéed mushrooms, cheese, minced garlic, salt, and pepper for the filling.
- Cut a pocket into each chicken breast and stuff with the mushroom mixture. Secure openings with toothpicks.
- Sear the stuffed chicken breasts on both sides until golden brown, about 4 minutes per side.
- Combine heavy cream and mustard, then pour over the chicken in the pan.
- Transfer the pan to the oven and bake for 25-30 minutes until cooked through.
- Remove from the oven, let rest for a few minutes, and serve warm.
