Description

A comforting casserole filled with layers of ground beef or turkey, black beans, corn, and melty cheese, all wrapped in soft tortillas.


Ingredients

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 6 small tortillas
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (canned or frozen)
  • 1 cup salsa
  • 1/2 cup sour cream (for topping)
  • Chopped green onions (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef or turkey in a skillet over medium heat until fully cooked. Drain excess fat.
  3. Stir in taco seasoning and follow package instructions.
  4. Layer the tortillas, meat mixture, black beans, corn, and cheese in a greased casserole dish. Repeat the layers, finishing with cheese on top.
  5. Pour salsa over the final layer, letting it soak into the cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is golden, melted, and bubbly.
  7. Remove from the oven and let cool slightly. Serve topped with sour cream and green onions.

Notes

Make-ahead and freezer-friendly: Prepare the casserole in advance and store in the fridge. This casserole freezes beautifully for up to three months.
