- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 2 cups shredded cheese (cheddar or Mexican blend)
- 6 small tortillas
- 1 can black beans (drained and rinsed)
- 1 cup corn (canned or frozen)
- 1 cup salsa
- 1/2 cup sour cream (for topping)
- Chopped green onions (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the ground beef or turkey in a skillet over medium heat until fully cooked. Drain excess fat.
- Stir in taco seasoning and follow package instructions.
- Layer the tortillas, meat mixture, black beans, corn, and cheese in a greased casserole dish. Repeat the layers, finishing with cheese on top.
- Pour salsa over the final layer, letting it soak into the cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is golden, melted, and bubbly.
- Remove from the oven and let cool slightly. Serve topped with sour cream and green onions.
Notes
Make-ahead and freezer-friendly: Prepare the casserole in advance and store in the fridge. This casserole freezes beautifully for up to three months.
