Description

A hearty, delicious salad with a medley of fresh veggies and protein-packed beans, perfect for any gathering.


Ingredients

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar or lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Combine the black beans and chickpeas in a large mixing bowl.
  2. Add the cherry tomatoes, diced cucumber, and red onion to the bowl.
  3. Gently mix in the chopped parsley or cilantro.
  4. Whisk together the olive oil, red wine vinegar (or lemon juice), garlic powder, salt, and pepper in a separate small bowl until smooth.
  5. Pour the dressing over the bean and vegetable mixture and toss to combine.
  6. Cover and let the salad chill in the refrigerator for at least 30 minutes.
